Ingredients
  

  • 2 ripe bananas
  • ½ cup unsweetened applesauce
  • 1 egg or flax egg substitute
  • ½ cup oat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons honey or maple syrup optional
  • Pinch of salt

Instructions
 

Preheat & Prepare:

  • Preheat the oven to 350°F (175°C) and grease a baking pan or line a muffin tin.

Mix the Wet Ingredients:

  • Mash bananas and mix with applesauce, egg, almond milk, and vanilla extract.

Combine the Dry Ingredients:

  • In a separate bowl, whisk together oat flour, baking soda, baking powder, and salt.

Merge & Mix:

  • Gradually add the dry mix to the wet ingredients, stirring until combined. Add honey/maple syrup if desired.

Bake to Perfection:

  • Pour into the pan or muffin cups and bake for 15-20 minutes until golden and firm.

Cool & Enjoy:

  • Let it cool on a wire rack before serving.

Notes

Use overripe bananas for the best natural sweetness.
Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
