Ingredients
  

Filling

  • 2 cups fresh strawberries hulled and sliced
  • 16 oz cream cheese softened
  • 1 cup granulated sugar for sweetness
  • 1 tsp vanilla extract for flavor

Crust

  • 1 ½ cups graham cracker crumbs for the crust
  • ½ cup unsalted butter melted

Topping

  • 1 cup whipped cream for topping

Instructions
 

Prepare the crust

  • Begin by preheating your oven to 350°F (175°C). In a mixing bowl, combine 1 ½ cups of graham cracker crumbs with ½ cup of melted unsalted butter. Mix until the crumbs are evenly coated. Next, press this mixture firmly into the bottom of a springform pan. Bake for 10 minutes, then remove from the oven and allow it to cool completely.

Make the filling

  • In a large mixing bowl, beat 16 oz of softened cream cheese until smooth. Gradually add 1 cup of granulated sugar and 1 tsp of vanilla extract, mixing until well combined. Afterward, gently fold in half of the sliced strawberries.

Assemble

  • Pour the creamy filling over the cooled graham cracker crust. Use a spatula to smooth the top. Place the cheesecake in the refrigerator to chill for at least 4 hours, or preferably overnight.

Serve

  • Once the cheesecake has set, remove it from the refrigerator. Top it with the remaining sliced strawberries and a generous dollop of whipped cream. Slice and serve.
