Instructions

Gather Your Ingredients

  • Start by collecting all your ingredients. You will need fresh broccoli, carrots, eggs, olive oil, salt, pepper, garlic powder, and optional cheese. Having everything ready makes the cooking process smoother.

Prep the Vegetables

  • Chop the broccoli into small florets and grate or finely chop the carrots. This ensures they cook evenly.

Whisk the Eggs

  • In a bowl, crack the eggs and whisk them until well combined. Add a pinch of salt and pepper for extra flavor.

Heat the Pan

  • Place a non-stick skillet over medium heat and add a drizzle of olive oil. Allow it to heat up, but be careful not to let it smoke.

Sauté the Vegetables

  • Once the oil is hot, add the chopped broccoli and carrots. Sauté them for about 3-4 minutes until they are tender but still vibrant.

Add the Eggs

  • Pour the whisked eggs over the sautéed vegetables. Allow the mixture to sit for a few seconds before gently stirring.

Scramble to Perfection

  • Using a spatula, gently push the eggs from the edges toward the center. Continue this process until the eggs are just set but still slightly runny.

Season and Serve

  • Once the eggs are cooked to your liking, season with additional salt, pepper, and garlic powder if desired. Serve warm and enjoy!
