  • Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle a little olive oil on the cut sides and sprinkle with salt and pepper. Place the squash cut-side down on a baking sheet. Bake for about 30-40 minutes, or until the flesh is tender and easily shredded with a fork.

Sauté the Garlic

  • While the squash is roasting, heat 2 tablespoons of olive oil in a skillet over medium heat. Add 3-4 minced garlic cloves and sauté for about 1-2 minutes, or until fragrant. Be careful not to burn the garlic, as it can turn bitter.
