Preparation

  • Gather all your ingredients: chicken thighs, bell peppers, carrots, potatoes, tomato sauce, garlic, onion, bay leaves, olive oil, soy sauce, chicken broth, black pepper, and chili flakes.

Sauté the Aromatics

  • In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic. Sauté until onions are translucent and fragrant, about 3-5 minutes.

Add the Chicken

  • Add chicken thighs to the pot. Cook until browned on all sides, approximately 5-7 minutes.

Incorporate the Vegetables

  • Add diced potatoes, carrots, and bell peppers. Stir to mix with chicken and aromatics.

Pour in the Sauces

  • Add tomato sauce, soy sauce, and chicken broth. Mix well to combine.

Season and Simmer

  • Add bay leaves, black pepper, and chili flakes. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 30-40 minutes.

Check for Doneness

  • Check chicken for tenderness. If not tender, simmer for an additional 10 minutes.

Serve and Enjoy

  • Remove bay leaves. Serve hot over rice or with bread. Garnish with fresh herbs.
