Cookie Dough Layer

  • 1 cup unsalted butter Softened to room temperature.

Cheesecake Layer

  • 16 ounces cream cheese Softened and whipped.
  • 1 cup granulated sugar Sweetens the cheesecake.
  • 1 teaspoon vanilla extract Adds warmth and depth.
  • 2 large eggs Bind the cheesecake together.
  • 1 tablespoon all-purpose flour Helps stabilize the cheesecake.

Preparation

  • Preheat your oven to 350°F (175°C).

Cookie Dough Preparation

  • Cream together ½ cup of softened butter and ½ cup of brown sugar until light and fluffy. Add 1 teaspoon of vanilla extract and 1 egg, mixing until well combined. Gradually incorporate 1 cup of flour, ½ teaspoon of baking powder, and a pinch of salt. Fold in ½ cup of chocolate chips. Set aside.

Cheesecake Filling Preparation

  • Beat 8 oz of cream cheese until smooth. Add ½ cup of granulated sugar and 1 teaspoon of vanilla extract. Mix until creamy, then add 1 egg and blend until fully incorporated.

Assembling the Layers

  • Line an 8x8 inch baking dish with parchment paper. Spread half of the cookie dough mixture evenly across the bottom. Pour the cheesecake filling over the cookie dough layer, smoothing it out. Crumble the remaining cookie dough on top.

Baking

  • Bake for 30-35 minutes until the edges are lightly golden and the center is set but slightly jiggly.

Cooling and Chilling

  • Let cool in the pan for about 15 minutes, then transfer to the refrigerator to chill for at least 2 hours.

Serving

  • Lift the bars out using the parchment paper, cut into squares, and serve. Optionally, drizzle melted chocolate on top.
