  • 1 Large Skillet For cooking chicken and sauce.

Ingredients
  

Pasta

  • 2 cups penne pasta Cooked until al dente.

Chicken

  • 1 pound boneless, skinless chicken breast Cooked and shredded.

Sauce

  • 8 oz cream cheese Or a dairy-free alternative.
  • 1 teaspoon garlic powder
  • 1 packet ranch seasoning mix Or homemade ranch blend.
  • 1 cup shredded cheddar cheese Or a plant-based substitute.
  • 1 cup low-sodium chicken broth Or vegetable broth.
  • 2 tablespoons olive oil
  • 2 green onions sliced For garnish.

Instructions
 

  • In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until browned and cooked through, about 6-7 minutes per side. Remove from the skillet and shred the chicken.
  • In the same skillet, add cream cheese, garlic powder, ranch seasoning, and chicken broth. Stir until the cream cheese melts and the sauce is creamy.
  • Add the shredded chicken and cooked penne to the skillet. Toss everything together until well-coated in the sauce.
  • Allow the mixture to simmer for about 5 minutes, letting the flavors meld together.
  • Top with shredded cheddar cheese and sliced green onions before serving.
