Preparation Steps

  • Preheat your air fryer to 375°F (190°C).
  • Slice the eggplant into ½-inch thick rounds and sprinkle salt on both sides. Let sit for 15 minutes, then pat dry.
  • Brush each slice with olive oil and sprinkle with garlic powder and Italian herbs.
  • Air fry the eggplant slices for 10-12 minutes, flipping halfway through.
  • Spread tomato sauce on each slice and sprinkle with cheese alternatives.
  • Add your choice of toppings.
  • Return the pizzas to the air fryer and cook for an additional 5-7 minutes.
  • Remove from the air fryer, let cool for a minute, and serve warm.
