Instructions
 

  • First, preheat your oven to 375°F (190°C). This ensures that your muffins bake evenly and rise beautifully.
  • Next, grease a muffin tin with cooking spray or line it with muffin liners. This step is crucial for easy removal of the muffins later.
  • In a skillet over medium heat, cook your breakfast sausage alternative until browned. Once cooked, set it aside to cool slightly.
  • In a large mixing bowl, whisk together 1 ½ cups of all-purpose flour, 1 tablespoon of baking powder, and a pinch of salt.
  • In another bowl, beat 3 large eggs and add 1 cup of milk. Then, mix in 1 cup of shredded cheese and a handful of chopped fresh herbs.
  • Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined.
  • Fold in the cooked sausage and any additional vegetables you like.
  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Place the muffin tin in the preheated oven and bake for 18-20 minutes. You’ll know they’re done when a toothpick inserted into the center comes out clean.
