Preparation
Preheat your oven to 375°F (190°C).
In a skillet over medium heat, add a tablespoon of oil and sauté chopped onions and garlic until fragrant. Add shredded chicken or black beans and stir in spices.
Warm the tortillas in a dry skillet or microwave to prevent tearing.
Assemble the enchiladas by filling each tortilla with the mixture, rolling them up, and placing seam-side down in a greased baking dish.
Pour enchilada sauce over the rolled tortillas and sprinkle cheese on top.
Bake for 20-25 minutes until cheese is bubbly and golden.
Garnish with cilantro and serve with sour cream or avocado slices.
