Ingredients
  

Tortillas

  • 12 pieces Corn Tortillas Fresh, soft corn tortillas.

Filling

  • 2 cups Shredded Chicken Cooked and shredded.
  • 1 cup Cheddar Cheese Shredded, can substitute with other cheese.
  • 2 cups Enchilada Sauce Store-bought or homemade.

Spices

  • 1 teaspoon Cumin For flavor.
  • 1 teaspoon Chili Powder For heat.

Toppings

  • 1/4 cup Fresh Cilantro Chopped, for garnish.
  • 1/2 cup Sour Cream For serving.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, add a tablespoon of oil and sauté chopped onions and garlic until fragrant. Add shredded chicken or black beans and stir in spices.
  • Warm the tortillas in a dry skillet or microwave to prevent tearing.
  • Assemble the enchiladas by filling each tortilla with the mixture, rolling them up, and placing seam-side down in a greased baking dish.
  • Pour enchilada sauce over the rolled tortillas and sprinkle cheese on top.
  • Bake for 20-25 minutes until cheese is bubbly and golden.
  • Garnish with cilantro and serve with sour cream or avocado slices.
