Ingredients
  

Seafood

  • 1 pound Fresh shrimp Peeled and deveined, wild-caught preferred.
  • 4-6 cloves Garlic cloves Minced.

Pasta

  • 9-12 sheets Lasagna noodles No-boil for convenience.
  • 4 tablespoons Unsalted butter For the sauce.

Cheese

  • 1 cup Parmesan cheese Grated.
  • 2 cups Mozzarella cheese Shredded.

Herbs

  • 1 lemon Lemon juice Freshly squeezed.
  • 2 tablespoons Olive oil For sautéing.
  • 1 cup Heavy cream For the creamy sauce.
  • 1 tablespoon Lemon juice For the creamy sauce.
  • Salt and pepper To taste For seasoning.
  • A handful Fresh herbs Chopped parsley and basil for garnish.

Instructions
 

  • Start by preheating your oven to 375°F (190°C). This ensures your lasagna bakes evenly and comes out bubbly and golden.
  • In a large skillet, melt 4 tablespoons of unsalted butter over medium heat. Add 4 minced garlic cloves and sauté for about 1 minute, until fragrant. Then, add 1 pound of fresh shrimp, cooking until they turn pink and opaque, which takes about 3-4 minutes. Remember to season with salt and pepper to taste.
  • After the shrimp are cooked, remove them from the skillet and set aside. In the same skillet, add 1 cup of heavy cream and 1 tablespoon of lemon juice. Stir well, then let it simmer for 2-3 minutes until slightly thickened.
  • In a 9x13 inch baking dish, spread a thin layer of the creamy sauce on the bottom. Next, place 3-4 lasagna noodles over the sauce. Then, add half of the cooked shrimp, followed by another layer of sauce and a generous sprinkle of 1 cup of shredded mozzarella cheese and ½ cup of grated Parmesan cheese.
  • Add another layer of noodles, followed by the remaining shrimp, more sauce, and cheese. Finally, top with a last layer of noodles, the remaining sauce, and finish with the rest of the mozzarella and Parmesan cheese.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. After that, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  • Once out of the oven, let the Garlic Butter Shrimp Scampi Lasagna rest for about 10 minutes. This allows the layers to set, making it easier to slice and serve.
