Noodles
- 200 grams Glass Noodles Translucent noodles made from mung bean starch.
Vegetables
- 1 cup Fresh Vegetables (bell peppers, carrots, snap peas) Chopped into bite-sized pieces.
- 2 tablespoons Soy Sauce For seasoning.
- 1 tablespoon Sesame Oil For cooking and flavor.
- 2 cloves Garlic Minced.
- 1 inch Ginger Grated or minced.
- 1 cup Broth Vegetable or chicken broth for moisture.
Protein Alternatives
- 200 grams Tofu or Tempeh Optional for added protein.
Cooking
Heat a large skillet or wok over medium-high heat and add sesame oil. Sauté minced garlic and ginger for 30 seconds until fragrant.
Add the chopped vegetables and stir-fry for 3-5 minutes until tender yet crisp.
Drain the soaked noodles and add them to the skillet, tossing to combine with the vegetables.
Drizzle soy sauce over the mixture and stir well to combine. Continue to stir-fry for another 2-3 minutes until heated through.
