Ingredients
  

Noodles

  • 200 grams Glass Noodles Translucent noodles made from mung bean starch.

Vegetables

  • 1 cup Fresh Vegetables (bell peppers, carrots, snap peas) Chopped into bite-sized pieces.
  • 2 tablespoons Soy Sauce For seasoning.
  • 1 tablespoon Sesame Oil For cooking and flavor.
  • 2 cloves Garlic Minced.
  • 1 inch Ginger Grated or minced.
  • 1 cup Broth Vegetable or chicken broth for moisture.

Protein Alternatives

  • 200 grams Tofu or Tempeh Optional for added protein.

Instructions
 

Preparation

  • Soak the glass noodles in warm water for 15-20 minutes until soft and pliable.

Cooking

  • Heat a large skillet or wok over medium-high heat and add sesame oil. Sauté minced garlic and ginger for 30 seconds until fragrant.
  • Add the chopped vegetables and stir-fry for 3-5 minutes until tender yet crisp.
  • Drain the soaked noodles and add them to the skillet, tossing to combine with the vegetables.
  • Drizzle soy sauce over the mixture and stir well to combine. Continue to stir-fry for another 2-3 minutes until heated through.
  • Transfer to a serving dish and garnish with chopped green onions or sesame seeds. Serve immediately.
