Meatball Ingredients

  • 1 pound Ground Chicken or Turkey A lean protein option.
  • 1/4 cup Fresh Parsley, chopped Adds vibrant flavor.
  • 1 tablespoon Dried Oregano Enhances taste.
  • 2 cloves Garlic, minced Adds robust flavor.
  • 1/2 teaspoon Salt For seasoning.

Tzatziki Ingredients

  • 1 cup Greek Yogurt Creamy base packed with protein.
  • 1/2 cup Cucumber, grated Squeezed to remove excess moisture.
  • 1 clove Garlic, minced For flavor.
  • 1 tablespoon Lemon Juice Adds brightness.
  • 1/2 cup Basmati Rice Fragrant grain for the base.
  • 1 cup Water For cooking the rice.
  • 1 pinch Salt For cooking the rice.

Instructions
 

Prepare the Meatballs

  • In a large bowl, combine ground chicken or turkey, parsley, oregano, minced garlic, and salt. Mix until well combined.

Shape the Meatballs

  • Shape the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

Cook the Meatballs

  • Preheat the oven to 400°F (200°C) and bake the meatballs for 20-25 minutes until golden brown and cooked through.

Cook the Rice

  • In a medium saucepan, bring water to a boil. Add basmati rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 15 minutes until tender.

Make the Tzatziki

  • In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and a pinch of salt until well combined.

Assemble the Bowl

  • Start with a scoop of rice, top with meatballs and a generous dollop of tzatziki. Add fresh vegetables if desired.
