Instructions
 

  • Begin by heating a tablespoon of olive oil in a large pot over medium heat. Once hot, add minced garlic and freshly grated ginger. Sauté for about 2 minutes, or until fragrant.
  • Add diced chicken breast to the pot. Cook for about 5-7 minutes, stirring occasionally, until browned on all sides.
  • Incorporate chopped carrots, chopped celery, and diced onion into the pot. Stir and allow the vegetables to soften for about 5 minutes.
  • Sprinkle in turmeric powder and stir well to coat the chicken and vegetables evenly.
  • Gradually add vegetable broth to the pot. Bring to a gentle simmer, about 5 minutes.
  • Reduce heat to low, cover the pot, and let the soup cook for 20-30 minutes.
  • Stir in coconut milk during the last 5 minutes of cooking for a creamy texture.
  • Taste and adjust seasoning with salt and pepper. Ladle into bowls and enjoy hot, garnished with fresh herbs if desired.
