Dough Ingredients

  • 2.5 cups all-purpose flour Foundation of the pretzel dough.
  • 1 packet active dry yeast About 2 ¼ teaspoons.
  • 1 cup warm water About 110°F.
  • 1 tablespoon sugar Feeds the yeast.
  • 1 teaspoon salt Essential for flavor.
  • 1 tablespoon olive oil Adds richness to the dough.

Filling Ingredients

  • 1 cup mozzarella cheese Cubed, for stuffing.
  • 2 tablespoons fresh rosemary Chopped, for flavor.
  • ½ cup grated Parmesan cheese Adds savory depth.

Boiling Ingredients

  • ¼ cup baking soda Used for boiling the pretzels.
  • to taste coarse sea salt coarse sea salt For sprinkling on top.

Instructions
 

Prepare the Dough

  • In a large mixing bowl, combine 1 ½ cups of warm water, 1 packet of active dry yeast, and 1 tablespoon of sugar. Let it sit for about 5 minutes until it becomes frothy.

Add the Dry Ingredients

  • Gradually mix in 4 cups of all-purpose flour and 1 teaspoon of salt. Stir until a dough begins to form. Knead the dough on a floured surface for about 5-7 minutes until it’s smooth and elastic.

Let It Rise

  • Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Prepare the Cheese Filling

  • While the dough is rising, cut 8 ounces of mozzarella cheese into small cubes.

Shape the Pretzels

  • Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, about 24 inches long. Form a U-shape, twist the ends together, and fold them back to create the pretzel shape.

Stuff with Cheese

  • Before sealing the pretzel shape, place a cube of mozzarella cheese in the center. Pinch the dough tightly to ensure the cheese is completely enclosed.

Boil the Pretzels

  • In a large pot, bring 10 cups of water to a boil and add â…” cup of baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds.

Season and Bake

  • Remove the pretzels from the water and place them on a parchment-lined baking sheet. Brush each pretzel with olive oil and sprinkle with grated Parmesan cheese and coarse sea salt. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.
