Instructions
Preparation
Preheat your oven to 425°F (220°C). Wash and peel the fresh carrots, then cut them into uniform pieces, about 1 to 2 inches long.
Roasting
Toss the carrot pieces with olive oil, sea salt, and black pepper. Spread them in a single layer on a baking sheet and roast for 25-30 minutes, stirring halfway through.
Whipping Ricotta
