Ricotta

  • 1 cup cups Ricotta Cheese High-quality, creamy ricotta.

Honey

  • 2 tbsp tablespoons Hot Honey Adds a sweet and spicy kick.

Oil and Seasoning

Preparation

  • Preheat your oven to 425°F (220°C). Wash and peel the fresh carrots, then cut them into uniform pieces, about 1 to 2 inches long.

Roasting

  • Toss the carrot pieces with olive oil, sea salt, and black pepper. Spread them in a single layer on a baking sheet and roast for 25-30 minutes, stirring halfway through.

Whipping Ricotta

  • While the carrots are roasting, whip the ricotta cheese with a pinch of salt and a drizzle of olive oil until smooth and creamy.

Serving

  • Once the carrots are roasted, transfer them to a serving dish, add a dollop of whipped ricotta on top, and drizzle with hot honey.
