Broth

Instructions
 

Marinate the Chicken

  • In a bowl, combine soy sauce (or coconut aminos), minced garlic, grated ginger, and sesame oil. Mix well. Add the chicken and coat it thoroughly. Allow it to marinate for at least 30 minutes.

Preheat the Oven

  • Preheat your oven to 400°F (200°C).

Prepare the Sticky Rice

  • Rinse 2 cups of sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.

Cook the Sticky Rice

  • After soaking, drain the rice and place it in a steamer basket lined with cheesecloth. Steam the rice over boiling water for about 30 minutes.

Roast the Chicken

  • Once marinated, place the chicken pieces in a roasting pan. Roast in the preheated oven for about 45-60 minutes, or until the internal temperature reaches 165°F (75°C).

Combine and Serve

  • When the chicken is done, remove it from the oven and let it rest for 10 minutes. Fluff the sticky rice with a fork. Serve the roasted chicken over a bed of sticky rice, garnished with fresh herbs.
