Preparation

  • Start by selecting your chicken. You can use either chicken thighs or breasts, depending on your preference. Trim any excess fat and pat the chicken dry with paper towels.

Marinade

  • In a mixing bowl, combine honey, soy sauce, minced garlic, and grated ginger. Stir well until blended.

Marinate

  • Place the chicken in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes.

Cooking

  • Transfer the chicken along with the marinade into your slow cooker. Pour in vegetable broth. Cover and cook on low for 6-7 hours or high for 3-4 hours.

Thickening Sauce

  • Remove the chicken and mix cornstarch with water. Stir this into the sauce in the slow cooker and cook on high for an additional 10-15 minutes.

Serving

  • Return the chicken to the slow cooker, coating it with the thickened sauce. Serve over rice or quinoa, garnished with sesame seeds or chopped green onions.
