Ingredients
  

Protein

  • 4-6 pieces Chicken Thighs Bone-in for extra flavor.

Vegetables

  • 1 medium Onion Chopped.
  • 3-4 cloves Garlic Minced.
  • 1 cup Cremini Mushrooms Sliced.

Greens

  • 4 cups Baby Spinach Fresh.

Carbs

  • 2-3 medium Yukon Gold Potatoes Diced.

Liquid

  • 2 cups Chicken Broth Preferably low-sodium.

Instructions
 

Prepare the Chicken

  • Season chicken thighs with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken skin-side down for 5-7 minutes until golden brown, then flip and cook for another 5 minutes. Remove from skillet and set aside.

Sauté the Aromatics

  • Add more olive oil if needed, then sauté onions and garlic for 2-3 minutes until translucent.

Add the Mushrooms

  • Add sliced mushrooms and cook for 5 minutes until tender.

Incorporate the Potatoes

  • Add diced potatoes and 1 cup of chicken broth, ensuring potatoes are mostly submerged.

Simmer Until Tender

  • Bring to a simmer, cover, and cook for 15-20 minutes until potatoes are fork-tender.

Add the Spinach

  • Stir in spinach and cook for 2-3 minutes until wilted.

Return the Chicken

  • Return chicken to the skillet, spoon sauce over it, cover, and cook for another 5 minutes on low heat.

Serve and Enjoy
