  • 4 cups Vegetable Broth Homemade or store-bought, gluten-free if needed.

Vegetables

  • 1 cup Carrots Chopped.
  • 1 cup Bell Peppers Chopped.
  • 1 cup Celery Chopped.

Herbs and Spices

  • 1 tablespoon Fresh Parsley Chopped, or use dried herbs.
  • 1 teaspoon Garlic Powder For added flavor.
  • 1 teaspoon Paprika For warmth.

Protein Alternatives

  • 1 cup Chickpeas Canned or cooked.
  • 1 cup Lentils Cooked.

Seasoning

  • to taste Salt Essential for flavor.
  • to taste Pepper Essential for flavor.

Instructions
 

Preparation

  • Gather your ingredients: rice, vegetable broth, vegetables, herbs, and spices.

Vegetable Preparation

  • Chop your chosen vegetables into bite-sized pieces.

Broth Heating

  • In a large pot, pour in the vegetable broth and bring it to a simmer over medium heat.

Sautéing Vegetables

  • In a separate pan, heat a splash of oil over medium heat. Add the chopped vegetables and sauté for about 5 minutes.

Adding Rice

  • Once the vegetables are slightly tender, add your rice to the sautéed mixture and stir well.

Combining and Simmering

  • Transfer the rice and vegetable mixture into the pot with the simmering broth. Stir and cover, letting it simmer for about 20 minutes.

Seasoning

  • After the rice is cooked, taste and adjust the seasoning with salt, pepper, or herbs.

Serving

  • Ladle the Souper Rice into bowls and garnish with fresh herbs or a squeeze of lemon. Serve warm.
