Ingredients

  • 1 pound chicken breast, diced

Pasta

  • 8 ounces pasta (penne or rotini)

Sauces

  • 1/2 cup ranch dressing
  • 1/2 cup spicy buffalo sauce

Vegetables

  • 1 each bell pepper, chopped Any color.
  • 2 cloves garlic, minced
  • 1 small onion, diced

Cheese

  • 1 cup shredded cheese (cheddar or mozzarella)

Oils and Seasonings

  • 2 tablespoons olive oil
  • to taste salt and pepper

Instructions
 

Boil the Pasta

  • Begin by bringing a large pot of salted water to a boil. Add your choice of pasta, such as penne or rotini, and cook until al dente, usually about 8-10 minutes. Once done, drain and set aside, but remember to reserve a cup of pasta water for later.

Sauté the Chicken

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add diced chicken breast, seasoning it with salt and pepper. Sauté until the chicken is golden brown and cooked through, approximately 6-8 minutes.

Add Vegetables

  • Next, toss in chopped bell peppers, minced garlic, and diced onion into the skillet. Sauté these ingredients for about 3-4 minutes, or until the vegetables are tender.

Incorporate Sauces

  • Stir in ½ cup of spicy buffalo sauce and ½ cup of ranch dressing. Mix well, allowing the flavors to meld together for about 2-3 minutes.

Combine with Pasta

  • Add the drained pasta to the skillet, tossing everything together. If the mixture seems dry, gradually add some reserved pasta water until you reach your desired consistency.

Finish with Cheese
