Preparation Steps

  • 1. Preheat your oven to 400°F (200°C) or heat oil in a frying pan for frying.
  • 2. In a mixing bowl, combine the fresh corn, chopped bell peppers, and diced jalapeños.
  • 3. In another bowl, mix cornmeal, baking powder, spices, salt, and pepper.
  • 4. Gradually add the dry mixture to the corn mixture, stirring until well combined.
  • 5. If baking, scoop the mixture onto a lined baking sheet and shape into small bites. Bake for 20-25 minutes or until golden brown. For frying, drop spoonfuls into hot oil and fry until crispy.
  • 6. Serve hot, garnished with fresh cilantro.
