Toppings

Instructions
 

Preparation

  • Gather all your ingredients: cooked chicken, fresh corn, brown rice, lime juice, spices, avocado, cheese, cilantro, and black beans.

Cooking the Rice

  • In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until tender. Fluff with a fork and set aside.

Sautéing the Chicken

  • In a large skillet, heat olive oil over medium heat. Add cooked chicken and sauté for about 5 minutes until warmed through.

Adding the Corn

  • Add fresh corn to the skillet and sauté for an additional 3-4 minutes until tender and slightly charred.

Seasoning the Mixture

  • Sprinkle in chili powder, paprika, salt, and pepper. Squeeze in lime juice and stir to coat evenly.

Assembling the Bowl

  • In a serving bowl, layer brown rice at the bottom, then spoon the chicken and corn mixture over it.

Adding Toppings

  • Top with diced avocado, crumbled cheese, fresh cilantro, and black beans.

Serving

  • Serve warm, garnished with lime wedges for extra zing.
