Sauce

  • ½ cup low-sodium soy sauce Brings umami flavor.
  • ¼ cup honey Natural sweetener; maple syrup can be a substitute.
  • 1 cup colorful bell peppers, sliced Adds color and crunch.

Instructions
 

Preparation

  • Start by placing the chicken in the bottom of your crockpot.

Sauce Preparation

  • In a bowl, mix the pineapple chunks, soy sauce, honey, minced garlic, and grated ginger. Pour this mixture over the chicken.

Vegetable Layering

  • Add the sliced bell peppers on top of the chicken and sauce.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
