Instructions
 

  • Trim excess fat from chicken thighs and season generously with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
  • Flip the chicken, add minced garlic and red pepper flakes, and stir for 30 seconds.
  • Add sliced bell peppers and sautĂ© for 3-4 minutes until they begin to soften.
  • Pour in chicken broth and lemon juice, scraping up browned bits from the skillet.
  • Return chicken to the skillet, cover, and simmer for 20 minutes.
  • Remove the lid, add chopped parsley, and stir gently to combine.
  • Plate the chicken and vegetables, spooning sauce over the top. Serve hot.
